Culinary Crafting with Palm Springs’ Master Chefs
Amateur and aspiring chefs, living in or visiting Palm Springs, must set aside time for Le Vallauris’ cooking class. Executive Chef Jean Paul Lair’s, and Pastry Chef Laurent Delac’s, class is a favorite amongst area foodies. In one of the most well respected kitchens in southern California, participants learn the secrets of French cuisine from two of Palm Springs’ celebrated chefs.
The interactive portion of Le Vallauris’ cooking class includes an in-house demonstration and savory lunch. In upcoming sessions, Jean Paul and Laurent will focus on pate (in dough), terrine (baked in a mold) and ballotine (poached in a sausage form) techniques. Chicken terrine, duck ballotine and seafood pate appetizers are all prepared, passed and sampled during the class. The chefs also cook a spiced, organic chicken in addition to an almond and pear dessert tart. Yes, guests are invited to partake in everything Chefs Lair and Delac whip up.
Don’t worry about bringing note-taking supplies; Le Vallauris provides writing materials, detailed recipes and preparation instructions for each dish featured in the class. Indeed, for gourmet enthusiasts and hobby chefs in Palm Springs, Le Vallauris’ monthly cooking class is not to be missed.

All of Le Vallauris’ cooking classes are held on Mondays, cost $55 a person, and will be held on the following dates in 2011: January 21, February 24, March 14, April 11, May 16 and June 13.
